Truffle Preparation

Our fresh truffles are shipped pre-brushed, clean, and ready to use upon arrival. However, some clients prefer to clean them further, as this is part of the pleasure and thrill of using truffles!  To clean your truffles, carefully go over them with a brush and wipe them clean with a moist paper towel. For best results, avoid brushes with tough bristles as this can damage the fungi. Next, pat truffles dry with a dry cloth. Allow the truffles to sit at room temperature for at least two hours before serving. Then, the truffles are ready to be enjoyed!

The rich and distinct flavor of truffles is most pronounced when thinly shaved on warm, complementary foods. Some dishes to consider featuring truffles include creamy pasta dishes, fatty foods, roasted vegetables, eggs, and even tasty French fries! The delicacy is predominately featured in meals as a finishing garnish. Although, their intense and delightful aroma allows the truffles to be the star of any dish.

They should be shaved while plating your dish, with the food still hot to ensure their aroma and flavors will infuse. Truffles should not be combined with intensely flavored dishes, such as certain cheeses like Blu cheese, as the contradictory smells will be overpowering.


  • Do not cut or shave the truffles until you are about to prepare them, as this will cause the fungi to lose their aroma quickly.
  • We recommended not rinsing truffles directly under water as the excess moisture will cause the fungus to rot.
  • If cooking your truffles, be sure not to use a high or permanent heat setting. Add the shaved truffles to your dish towards the end of cook time.
  • For serving, approximately 10 grams per person is an ideal portion. About 1 oz of fresh truffles serves 2 to 3 people.
